Penang Char Koay Teow

Penang Char Koay Teow, literally "fried flat noodles", is a popular Malaysia
and Singapore hawker food found in many hawker centres and coffee shops. It is
made from flat rice noodles, approximately 1 cm or slightly narrower in width,
fried over very high heat with light and dark soy sauce, chilli, prawns,
cockles, egg, bean sprouts and Chinese chives.
Penang version by far enjoys great popularity. What sets it apart is that it is
cooked without sweet sauce added. Bean sprouts, chives, fish cakes, char siew,
cockles and Chinese sausage are the usual ingredients; not forgetting pork lard,
which gives the dish its full-bodied flavour.
