Penang Hokkien Char

Hokkien Char is a fried noodle dish that is commonly sold by hawkers in
Penang. It is usually served with a dip (or dollop) of sambal belacan.
The main ingredients of Hokkien Char are mee (yellow-colour egg noodles) and
bihun (white-colour rice noodles). To these are added prawns, pork and chye sim
(Chinese mustard green). Some stall also include fish balls and pork liver to
their Hokkien Char.
Variations to Hokkien Char is found in other states of Malaysia as well as in
Singapore. However, beyond northern Malaysia, the dish is called Hokkien Char
and even Hokkien Mee.
It is never called Hokkien Mee in Penang, as Hokkien Mee refers to an entirely
different dish here, the one called Prawns Mee elsewhere in Malaysia.
